Thunder Bay Grille is currently seeking an experienced Sous Chef/Kitchen Manager to join the team in Pewaukee/Waukesha, WI. We are seeking someone with experience as a Sous Chef/Banquet Chef or Kitchen Manager with at least 3 years experience operating a full service kitchen. Reports to the Executive Chef.
Position Summary:
Run shift with primary responsibility for the back of the house staff delivering outstanding food in a timely manner.
Key Responsibilities:
§ Schedule shifts properly to ensure staffing levels to meet guest demands
§ Use the labor scheduling matrix to assist in the scheduling process
§ Supervise line, prep, dish washing staff
§ Participate in the hiring process
§ Assess and review staff performance and ensure the maintenance of personnel records
§ Communicate effectively to staff and executive team members
§ Implement staff incentive programs
§ Ensure good safety practices of staff members and guests
§ Maintain proper emergency and security procedures
§ Follow through on guest complaints, respond quickly and take corrective actions
§ Communicate with executive team members in executive meetings
§ Work with the front of the house to ensure food quality, ticket times etc.
§ Prepare monthly inventory -- food, D&G etc.
§ Assist with food ordering
§ Control food costs to maintain "ideal" level
§ Work with food distributors for best pricing and food quality
§ Maintain standards for food quality, presentation, recipe adherence, kitchen cleanliness
§ Continue professional development through Heart University training activities
Skills Needed:
§ Ability to work well in a high volume environment
§ Strong communication skills
