Position Purpose
The Manager for Pagliacci Pizza (payroll title: Manager Of Program Operations) manages a Pagliacci franchise unit located on the University of Washington’s Seattle Campus to ensure brand integrity and compliance.

RESPONSIBILITIES

Leadership:
  • Implements and maintains department and Pagliacci quality control standards and specifications.

  • Administers an organizational culture within the venue that reflects adherence to UW Dining department’s Mission Statement.

  • Promotes and ensures a culture that focuses on the practice of excellent customer service.

  • Collaborates with General Manager to ensure that goals and objectives are implemented.

  • Maintains visibility and accessibility with customers, building managers and staff members (during meal period 90% on floor, 10% in office).

  • Interviews and selects staff, and ensures staff are on-boarded to the work unit and attend required HFS and UW required training.

  • Identifies and utilizes multiple venues for soliciting customer feedback and responds to complaints, questions and special requests.

  • Monitors compliance with established marketing standards and promotions, and takes corrective action when necessary.

  • Develops positive working relationships with unit managers and building coordinators.

  • Communicates Department goals and objectives to staff and ensures that venue activities are in alignment with these goals and objectives.

  • Attends Pagliacci and HFS manager meetings and events and contributes in leadership discussions and presentations.


  • Operations and Customer Service:
  • Engages directly in the daily operations of the unit, ensuring proper food production for established service plans.

  • Ensure compliance with Pagliacci Operational Practices including Schemes, Product Audits, and daily checklists to maintain quality control standards and measurements.

  • Develops and maintains an ongoing cleaning schedule of displays, freezers and prep and storage areas to ensure a consistent level of sanitation and cleanliness to meet health department standards.

  • Identifies and corrects unsafe conditions, trains, monitors performance in environmental safety and customer service.

  • Orders routine maintenance.

  • Maintains security measures to prevent theft and vandalism.

  • Prepares and submits required reports of production and service records.

  • Utilizes the Online Accident Reporting System (OARS) for every work accident and injury; notifying appropriate authorities and personnel.

  • Monitors operations for compliance with sanitation and other food safety standards and takes corrective action when necessary.

  • Conduct formal and in-service training as needed on unit and food safety, food preparation and/or customer service.

  • Utilize Humanity’s training section to ensure all trainings are tracked and within compliance for HFS and Pagliacci.


  • Fiscal Management:
  • Collaborates with General Manager in developing financial targets for annual budget.

  • Report out probable causes for budget variances or discrepancies and makes adjustments.

  • Comply with business plans established during the budget development process.

  • Uses fiscal management systems and tools including the CBORD FSS, Questica, Great Plains, and Workday.

  • Uses CBORD for purchasing, inventory, transfers and service menus.

  • Maintains proper controls over resources, including cash, inventory and labor, including separation between purchasing, receiving and counting inventory.

  • Monitors performance of products, services and programs and works collaboratively with vendors to make adjustments as necessary to meet established sales and service goals.

  • Use our scheduling program, Humanity, to ensure all scheduled labor hours fall within budget.


  • Supervision:
  • Interviews and hires classified and student staff.

  • Ensure that staff have completed all appropriate levels of Pagliacci training and certification within established timeline.

  • Provides training to new employees to orient them to the unit, UW Dining, HFS and the UW.

  • Collaborates with General Manger to ensure staffing schedules meet operational needs.

  • Monitors staff attendance and addresses unplanned absences, tardiness and leave without pay.

  • Uses Workday on daily basis to review in and out punches and leave requests.

  • Engages directly in the operation to observe work and provide constructive feedback.

  • Conducts in-service training as needed on unit safety, cash handling, food safety, food preparation and/or customer service.

  • Completes annual performance evaluations for direct reports.

  • Provides staff with tools and training to maintain Department and Pagliacci customer service standards

  • Provides staff with on-the-job development.

  • Consults appropriately with General Manager and HFS Human Resources to ensure that UW, HFS and bargaining unit policies, guidelines are followed in administering progressive, corrective action principles and union contracts are followed in addressing employee performance problems.


  • IMPACT TO THE UNIVERSITY
    Units offer convenience to campus community for sit-down dining, quick refreshments and grab-and-go meals.

    POSITION COMPLEXITIES
    This position must manage a highly-prescribed franchise while balancing the business needs of HFS. Pagliacci locations are part of retail and residential dining units and share storage and preparation space. This requires cooperation and camaraderie with peers. As an HFS employees, Pagliacci shares space with other staff members.

    WORKING CONDITIONS
    While the position is not expected to work all hours of operation, the schedule must incorporate flexibility to ensure a presence on a variety of shifts from early morning to late evening and weekends. In addition to Pagliacci, the position is expected to work special HFS and University events that may fall outside the regular work schedule.

    QUALIFICATIONS
  • Bachelor’s degree in hospitality, business administration or related field.

  • Minimum of one year of management experience in the food service industry.

  • Excellent interpersonal, organizational, analytical, communication and problem-solving skills.

  • Proficiency with Microsoft Office, including Word, Excel, Outlook, PowerPoint and Project.


  • Equivalent education/experience will substitute for all minimum qualifications except when there are legal requirements, such as a license/certification/registration.

    DESIRED QUALIFICATIONS
  • Experience in college or university food services.


  • A satisfactory outcome from employment reference check.

  • Washington State Food Card within two weeks of hire and maintenance of thereafter.

  • ServSafe certification within three months of hire and maintenance of thereafter.

  • Certification by Pagliacci as a Core Crew Member within a year of hire and maintenance of thereafter.
