Culinary Services Manager CDM

We are currently looking to add a Culinary Services Manager to our Culinary Team! We are looking for someone that is passionate about food, detailed orientated, well groomed, friendly, professional, team player that has a pleasant demeanor and adheres to company policy and procedures.

The responsibility of the Culinary Services Manager is the overall daily management of the Culinary Services Department. Culinary Services Manager follows the residents care plan for nutritional meals according to BSG Policy and Procedures. Must be familiar with the latest edition of the Federal Food Code and provides leadership to the department to ensure local, state and Federal regulatory compliance. Maintains records of department personnel, and HACCP logs, manages multiple budgets. Accounts for the income to the department. Insures that needed supplies/food are on hand and inventory levels are at par. Communicates well with Patients/Residents/Account Managers/Staff/and Regionals.

Responsibilities

  • Maintains confidentiality, protects HIPAA Knows resident rights and helps them protect such rights
  • Updates the Dietary SDS book with current chemicals that are kept in the kitchen
  • Detailed orientated, well groomed, friendly, professional, team player that has a positive attitude
  • Reviews meals and approves menus
  • Maintains confidentiality, protects HIPAA, knows, and protects Resident Rights, pleasant demeanor and adheres to company policy and procedures
  • Supervises Culinary Staff
  • Recruits, interviews, hires, trains, coaches, evaluates, rewards disciplines, and when necessary, terminates employment
  • Labor Management/Control
  • Updates Resident Medical Record (if needed)
    • Understands nutritional requirements for entire resident population
    • Attends Care Plan Meetings per policy
    • Completes the MDS according to required timeline
    • Monitors weight gains and losses and reports to dietician for those at nutritional risk
    • Tray Card Program
    • Visits residents in 48hrs of Admission to interview
    • Processes all diets and updates tray card program
    • Records allergies and updates staff and meal tickets
  • Prints select menus for residents each week
  • Prints meal tickets daily
  • Documents complaints that residents have and resolves their issues.
  • Ensures in the proper receiving FIFO, stocking, storing, and preparing of
  • all ingredients for safety and accessibility with proper dating for each step
  • Follows HACCP plan
  • Audits all meals
  • Makes sure menus, diets and portion sizes are followed
  • Mealtimes are posted in sight and monitored for compliance
  • Adheres to the dress code policy and ensures staff is properly dressed
  • Conducts monthly in-service with staff
  • Audits all logs
  • Ensures all temperature logs are current daily and correct temperatures are recorded
  • Ensures cleaning logs are up to date and cleaning is done in kitchen
  • Maintains equipment cleaning logs reports to buildings when equipment isn't functioning correctly, and ensures its cleaned on a regular basis
  • Updates the Dietary SDS book with current chemicals that are kept in the kitchen
  • Perform all other kitchen duties as assigned by Regional Director of Culinary Services
