PURPOSE OF POSITION: To manage and maintain the purchase and receival all merchandise, foodstuffs, beverages, paper supplies, stewarding supplies, janitorial supplies, china, glass, silver, and kitchen equipment. To ascertain that products purchased conform to restaurant specifications and standards of quality. This position will maintain an efficient inventory and pars to supply the outlets. The Purchaser will build relationships with vendors and constantly analyze pricing to get best pricing possible. To directly supervise all purchasing department personnel at Deer Valley.

SPECIFIC JOB REQUIREMENTS:


  • One year of job related experience in working with food, or one year of job related experience in purchasing
  • Must be 21 years or older
  • This is a physical job that requires moving product around the lodge. Must be able to lift and carry 50 lbs.

JOB DUTIES AND RESPONSIBILITIES:
  • Adhere to and consistently develop purchasing, procurement and receiving policies
  • Be the driving force behind obtaining and implementing new purchasing program for Deer Valley
  • Interview vendors to obtain information relative to product, price, availability, service and delivery date
  • Obtain price quotes, based on specifications for all products to be ordered
  • Review requisitions and determine orders based on need and price, availability, service and delivery date
  • Send orders with price quotes for food items to Storeroom Clerk and Chef
  • Maintains operating supplies checkbooks pertaining to items purchased, costs, and delivery dates to ensure costs are kept within budget
  • Discuss quality factors with Chefs, Storeroom personnel, restaurant managers, Food and Beverage Director and VP of F&B to determine value, taking corrective action when necessary
  • Follow-up on orders to insure delivery dates
  • Make plant visits to various suppliers from time to time to remain familiar with their operations
  • Buy without prejudice, seeking to obtain the maximum value for each dollar of expenditure
  • Strive consistently for knowledge of materials and processes of product purveyors and manufacturers
  • Establish practical methods and SOP's for the conduct, maintenance and cleanliness of all purchasing offices, receiving docks and storeroom on property
  • Review and update specifications on food products
  • Correlate storeroom and accounting procedures
  • Work well with the chefs, food and beverages services supervisor, restaurant managers and other departmental managers
  • Manage, train and develop all storeroom personnel in all storeroom locations including scheduling, reviews and disciplinary action
  • Manage all Gourmet Market operations including production, inventory and on and offsite sales
  • Possess a thorough knowledge of ULCC regulations
  • Possess a thorough knowledge of wine, associated tastes and characteristics
    • Compile liquor and wine orders in a timely fashion to insure no shortages or outages occur
    • Conduct monthly inventory and semi-annual liquor commission audits and price updates
    • Responsible for company catalog orders (office supplies)
  • Conduct monthly food inventory with staff in all storeroom locations throughout Deer Valley
  • Maintain par levels and supply demands based on business levels and supplier challenges; monitor obsolete and slow-moving product weekly to reduce par and/or communicate movement and usage
  • Attend daily BEO meetings with Sales and Catering to determine product needed for events
  • Manage Avendra accounts and purchases to maintain high Avendra levels based on annual spending
  • Perform any other duties as assigned by the Resort Executive Chef, Resort Executive Sous Chef, VP of Food and Beverage or VP of Finance

Pay: $75,000 - $80,000 per year
