Overview: The Cook is responsible for food preparation that meets or exceeds hospitality and service standards of the community. The Cook prepares palatable and proper-portioned food for all residents and guests in accordance with production sheets, standardized recipes, preparation methods, portion control, time schedules and sanitary standards as well as serving procedures.

Essential Position Functions:

  • Prepares all food items using standardized recipes, presentation specifications, and portion control and sizes as set by Community standards.
  • Prepare all special dietary need as directed by the Resident Menus.
  • Monitor all food items to ensure the guidelines for temperature, taste, and quality are upheld at all times.
  • Responsible for properly storing food orders and other supplies, as well as, properly storing and labeling prepared foods.
  • Regulate and monitor temperature of ovens, broilers, grills, and roasters.
  • Manage all food production in the absence of the Sous Chef or Lead Cook.
  • Cleans and maintains assigned work station in a safe, sanitary and organized condition. Assists with the cleaning, sanitation, and organization of kitchen, walk-in coolers, and all storage areas.
  • Follows proper food handling techniques, coordinates the use of time, material and equipment to avoid waste and unnecessary expense. Follows all sanitary guide lines set by state law and HAACP, includes proper labeling, storing (FIFO), proper handling of hot and cold foods.

Qualifications:

  • High school diploma or equivalent preferred, but not required
  • A minimum of three years experience as a Cook in a hotel, restaurant, club or similar institution, preferred.

Location: Just south of Miami, East Ridge is on 76 acres inside the city of Cutler Bay. We’re minutes from Palmetto Bay Golf Course, Matheson Hammock, Southland Mall, Zoo Miami, The Falls and so much more. A weekend getaway to the Keys is a sunny drive south on U.S. 1; Miami International Airport is about 30 minutes north.
