If you're unfamiliar, Fairplay is neighborhood sports bar in North Park. We've been operating since fall of 2022. We have a full bar and kitchen and we're open 7 days a week. The kitchen operates from Open to 10pm daily serving the same menu from lunch through dinner. We offer weekly lunch specials and focus on familiar food done exceedingly well. Job Summary:

The Kitchen Manager supervises daily kitchen operations. Kitchen Manager responsibilities include supervising the food prep and cooking, maintaining a fully-stocked kitchen inventory and complying with safety and cleanliness standards.

Time commitment:

35-45hrs / week. This time commitment will spread between a mix of cooking on the line, maintenance / organization, prep, and ordering. Mondays and Tuesdays are considered weekends for the position though flexibility is required for special events / holidays.

Wages:

$22-24/hr (DOE) + tips for service shifts (line or prep, not admin).

Duties:

• In coordination with MGMT team, develop menu items, including core items and specials.
• Build recipes for specials and new menu items.
• Train staff and maintain standards for preparation, portion and presentation.
• Manage kitchen staff and coordinate food orders.
• Supervise food prep, cooking, and other kitchen processes.
• Serve as Lead Line Cook throughout busy services.
• Maintain cleanliness, sanitation, and organization of kitchen and food prep areas.
• Handle purchasing, verifying costs and developing new ordering guidelines.
• Update and maintain the Fairplay Recipe Book.
• Control costs associated with labor and waste.
• Manage inventory by updating and maintaining product pars.
• Advise on staffing levels and employee issues.
• Monitor and communicate equipment and maintenance needs to General Manager.

Skills:

• Strong leadership and communication skills.
• Hands-on experience with planning menus and ordering ingredients.
• Knowledge of a wide range of recipes and cooking techniques.
• Familiarity with kitchen sanitation and safety regulations.
• Conflict management abilities.
• Basic word processing and spreadsheet skills.
• Strong mathematical skills and familiarity with units of measurement.
• Ability to track and cost menu items.
• Ability to manage a team in a fast-paced work environment.
• Ability to work in physically demanding scenarios and standing for long periods.
• Flexibility to work during evenings and weekends.
