Job Summary: The Jr. Sous Chef reports directly to the Executive Chef and Sous chefs and leads the hot line. Assist the sous chefs in supervising food production for all a la carte restaurants, and other functions at the club. Manage the production and quality control of employee meal. The Jr. Sous Chef position is a management training position.

Job Tasks: Prepares or directly supervises kitchen staff responsible for the daily preparation of all menu items and daily specials to ensure that methods of cooking, garnishing and portion-sizing follow The MCC standards and recipes.

• Assists Sous chefs with supervision and training of employees, sanitation and safety, menu planning and related production activities.
• Executes Meat and Fish fabrication and maintains the usage and storage of all proteins.
• Consistently maintains standards of quality, cost, eye appeal and flavor of foods.
• Personally works in any station as assigned by the Executive Chef/ Sous Chefs
• Assists in maintaining security of kitchen, including equipment and food and supply inventories.
• Manages production schedule, and consistent quality for employee meal.
• Supervises and trains kitchen personnel.
• Checks mise en place before service time and inspects presentation of food items to ensure that quality standards are met.
• Consistently motivates the kitchen employees and ensures they are working with a positive attitude.
• Understands and consistently follows proper sanitation practices including those for personal hygiene.

Hot and Cold line cooks, production kitchen cooks.
