Under the supervision of the Executive Chef or Culinary Director the incumbent is responsible for following established procedures to ensure the sanitary maintenance of the kitchen and the entire food service areas. Responsible for set-up, operation and cleaning of the dish machine. Cleans and sanitizes dishware, pots and pans and all food service areas. Responsible for proper handling and storage of clean dishware. Performs heavy cleaning duties as assigned. Receives goods under the direction of the Executive Chef or Supervisor and stores these goods in the appropriate areas. Reports shortages on deliveries or poor-quality products. Follows accepted and proper receiving techniques. Takes temperature readings of dish machine and sanitizer tests of third bay sink and reports any substandard conditions. Performs other duties as directed. Performs all job responsibilities according to Duncaster’s policies and procedures.

Job Duties

  • Loads and unloads according to departmental procedures at all times
  • Washes certain items, trays, platters large mixing bowls using correct manual dishwashing techniques
  • Disposes of and transports to disposal area all trash
  • Disposes of and transports to disposal area all cardboard
  • Disposes of and transports to disposal area linen bags
  • Returns clean dishes, utensils or equipment including carts to proper storage areas
  • Sweeps and mops all floors and coverings
  • Sweeps and mops all walk-in coolers
  • Performs heavy duty cleaning assignment as assigned
  • Receives goods under direction of the cooks and stores goods in the appropriate areas using FIFO
  • Properly stores all recyclables in the proper containers and delivers them to the dock for disposal
  • Cleans recyclables containers according to policy
  • Assist with setting up functions including moving tables, setting up chafing dishes and assist with delivering beverages and food into designated areas.

Job Requirements:

Education and Experience

  • Must be 16 years of age or older and Highschool diploma or equivalent preferred.
  • Must be able to speak, read and write the English language in an understandable manner.
  • 1-2 years in similar position is preferred.
  • Must be able to understand and wear Personal Protective Equipment when needed and Understand the Fundamentals of Material Safety Data Sheets.
  • Must be able to safely perform the essential job functions with or without reasonable accommodations.

Hours:

Weekdays from 11:00 AM to 8:30 PM - some flexibility in hours. Weekend hours may be available during as needed. Hours to be discussed with Hiring Manager.
