General Summary of Job Duties

Under the direction of the Sous Chef, the "Sushi" Specialty Cook will help to create master culinary delights featuring Mexican infused Japanese dishes in our newest dining venue "Su Casa". The "Sushi" Specialty Cook is also responsible for providing excellent guest service, anticipating guest needs and problem solving with great judgment skills. All duties and assignments are to be performed according to departmental and company standards. If you have experience in fusion cooking, enjoy working and promoting a team environment, we want you to heat up our kitchen!

Principle Responsibilities and Duties

  • Maintenance of all areas in accordance with Clark County Health Department.
  • Completion of all daily menus and food products on all parts of the line/kitchen.
  • Report any poor product or below quality items to sous chef or above immediately upon noticing.
  • Proper food handling in accordance with Health Department.
  • Have all menu items on hand or Food & Beverage approved substitutions and communication of these to the entire front of house team.
  • Accuracy in all recipes used in the outlet, whether produced there or not and if applicable, proper plating in accordance with set standards.
  • Daily taking and maintaining of your station and areas inventory.
  • Guaranteeing quality product is on your station at all times.
  • Report any engineering needs or equipment failures/malfunctions to the culinary team or outlet manager as soon as they are noticed.
  • Develop guest loyalty through personalized customer attention (internal and external when possible).
  • Knowledge of grill, flat top, broiler, steamer, deep fryer, salamander and Sautee station.
  • Specific knowledge pertaining to the required cuisine.
  • Knowledge of taking temperature of steaks.
  • Knowledge of break down seafood.
  • Performing other duties requested as assigned.

Skills, Education & Other Requirements

  • Must be a minimum of 21 years of age
  • 2 years of Asian-fusion/Japanese cooking cuisine experience preferred.
  • Specific knowledge pertaining to the required cuisine.
  • Knowledge of taking temperature of steaks.
  • Knowledge of breakdown of seafood.
  • The ability to work within a team environment.
