Essential Responsibilities

  • Hire, train and supervise all kitchen staff
  • Do monthly inventory with account representative on first of every month
  • Purchase all food products for the kitchen, banquets, employee cafeteria, and room service
  • Ensure that all food is properly stored and labeled with dates
  • Maintain and oversee all cooking temperatures and cooling temperatures
  • Schedule all kitchen employees
  • Supervise food cost and labor cost levels to keep to budget standards
  • Ensure that all kitchen equipment is working well and cleaned properly
  • Communicate with other managers regarding any concerns that might pertain to food and beverage issues or the Hotel in general
  • Keep in close verbal contact with head of facilities as to repairs needed
  • Do reviews on all staff in a timely manner
  • Keep current weekly bids to have comparative vendors
  • Do weekly check request for all invoices to be given to AP
  • Create and implement menus for all F&B outlets
  • Ensure that all food is properly labeled, dated, wrapped and stored in its proper place and in upright position

Qualifications & Requirements

  • Strong verbal and communication skills
  • Ability to multi-task
  • Strong knowledge of kitchen operations and functions
  • Knowledge of costing and changing menus
  • Computer skills needed (windows, word, excel, POS - Micros)
  • Garde Manager skills
  • Full Culinary Skills
  • Culinary School degree
  • Sous Chef and/or Executive Chef experience
  • Banquet Chef experience
  • Hotel Experience Preferred
  • 5 to 7 years kitchen experience
