Job Description

The East Region Manager provides nutrition and operational support for the Region relative to sales and operations to meet client and operational needs, assists in the execution of the LOB Quality Assurance (Op-X) program, food service production software system, and acts as a liaison between Supply chain Management and field operations. Acts as technical expert as needed for client inquiries and provides professional information for our clients as well as ARAMARK staff. Provides training and development to field leadership in areas of nutrition and operational expertise. Reports directly to the Director, Nutrition & Operational Support Services. Works in conjunction with regional leadership teams. Follows ARAMARK Correctional policies in addition to professional standards. Interacts with Region staff, Sales Directors, District Managers, and Front Line Managers, current and prospective clients. Required to be a registered dietitian.

This role will interface with multiple disciplines throughout the LOB, and will assists in the execution of the LOB Quality Assurance (Op X) program and PRIMA Web food service production system.

Provides support for the menu and nutrition-related areas of sales opportunities. Assists in customizing programs based on specifications and unique client needs. Provides accurate food cost data for all of the types of meals required for each bid. Develops all required menu related proposal information for smaller bids. Reviews the proforma for accuracy.

Job Responsibilities

• Develops a strong level of trust and credibility with clients and the field regarding the technical nutritional competency of ARAMARK Correctional Services.
• Provides technical expertise in operational menu planning for the Region for regular, therapeutic, religious and juvenile nutritional needs. Requires an understanding of current applicable nutrition-related government regulations and current nutrition research knowledge for application to meet client needs. Considerations for every opportunity include balancing budgetary restraints with nutritional requirements and client specifications.
• Assists in the development of Quality Assurance (Op-X) operating standards for the LOB, in conjunction with Operations, to assure contract compliance standards, compliance to food cost targets, American Correctional Association (ACA) accreditation where applicable, and USDA compliance for juveniles.
• Provides support within the region in the execution of ACS operational standards, including food cost targets and execution through assistance in the development of tools and training. Interacts with Front Line Managers regularly to provide them the needed tools and information.
• Provides support for the Region related to Supply Chain Management (SCM). Acts as liaison to the field operators as SCM for procurement and distribution. Supports the execution of processes to ensure compliance with purchasing programs. Assists in the testing of products and input as needed to determine product usage for the LOB.
• Promotes sharing of best practices within the region and LOB.
• Develops tools and training to assists sales and operations in the areas of nutrition and operational support, quality assurance, and food cost control. Works with Director, Nutrition & Operational Support Services to design and deliver necessary program content as appropriate.
• Maintains the department’s administrative functions as needed, including word processing and assembly of field tools.
• Demonstrates flexibility to support periodic time-sensitive business needs outside the scope of a standard working day or week.
• Utilizes PRIMA Web operational food production software system designed for ACS to assure contractual compliance with standards. Accurately computes all menu costs for sales opportunities as well as on-going menu revisions to meet client needs. Assists to ensure appropriate execution of program within the LOB.

Qualifications

• Must be a Registered Dietitian
• 1-3 years experience (no management experience required)
• Role requires at least 50% travel.
