If you to have at least 2 years of multi-unit Executive Chef experience with a focus on culinary excellence, and 3+ years experience as an executive chef in a high-volume scratch kitchen including creating and writing recipes, we want to hear from you! Ideal candidates will have a proven track record of achieving results and building a winning team along with an extensive knowledge in all areas of BOH.

MFG is a growing mulit-concept restaurant group, currently with 4 restaurant concepts located Mishawaka, IN; Corndance Tavern, Bourbon & Butcher, Evil Czech Brewery and Jesús Latin Grill & Tequila Bar. Carnegie Library Special Events is our private event space seating up to 175 guests and is located in the upper level of Jesús. Multi-unit & mulit-concept management experience is a plus.

You will be responsible executing the brand in multiple restaurant concepts in accordance with Market Fresh Gourmet guidelines.
You will provide direction, training and coaching while understanding and demonstrating MFG standards, policies and procedures, Vision of “A Passion to Serve,” and our Mission of focusing on our guests, each other, our stakeholders and the communities in which we do business.

Duties Include:

  • Oversee all restaurant kitchens as well as butcher shop.
  • Ensuring restaurant chefs are hiring and retaining team members to help improve productivity and quality of the guest experience.
  • Assist chefs in hiring, promoting and cross-concept training for BOH staff.
  • Report to Senior Director of Operations.
  • Work with Senior Director of Operations to establish budgets for all restaurants in alignment with region and company goals.
  • Work with vendors to maintain quality and integrity of products.
  • Establishing relationships with local vendors & farmers
  • Teaching, coaching, leading and developing Chefs, Sous Chefs, lead line and the entire BOH team.
  • Developing & rolling out menus for different concepts.
  • Ensure procedure changes are rolled out in a clear, precise and effective manner.
  • Ensuring that the strictest standards of sanitation, food safety and cleanliness are practiced in every restaurant, by ever team member on a daily basis.
  • A focus on culinary excellence.
  • Promoting and protecting MFG Brand Absolutes.
  • Diagnose and help troubleshoot kitchen opportunities.

Job requirements:

  • Strong administrative skills including, email & text communication, P&L knowledge, ordering & inventory management.
  • You will be provided a Mac book and company email, and must be able to use Mac & Mac programs (pages, notes, icloud etc)
  • Menu creation from start to finish- creating recipe pricing, creating physical menus, training BOH staff and communicating/training with FOH staff.
  • Menu creation in InDesign
  • Create prep list and recipe books for all locations

Other Requirements:

  • High school graduate or GED equivalent.
  • Must be able to speak, read, write, understand and conduct two way communications in English and Spanish.
  • Must be able to perform basic business mathematical computations.
  • Must be able to meet the specific requirements for alcohol and food handling which may require licensing or certification.
  • Valid driver's license is required.
  • Excellent interpersonal, communication, and listening skills including verbal and written communications.
  • Ability to interact positively and professionally with people at all levels, both internally and externally.
  • Problem analysis and resolution skills.
  • Ability to select, coach, develop, and retain strong management teams.

Job Type: Full-time

Pay: $80,000.00 - $100,000.00 per year
