The Vessel Cook will plan, direct, participate and supervise food service activities at the galley. This includes preparation and delivery of four daily meals for all employees. Meals are served buffet style. The Vessel Cook will plan and develop recipes while considering for food budget requirements and maintaining overall food quality & consistency.

The vessel operates 24 hours/ 7 days a week during the processing season. This position requires being actively involved in food preparation while working solo. The Vessel Cook sets an example for the department staff in work ethic, safety protocol, and attitude.

Essential Duties andResponsibilities

The duties in this position include the following:

· Manage inventory levels of food supplies, determine amounts of required supplies, supervise storage, and the use of leftover uncooked products.

· Oversee proper rotation of food to ensure quality and freshness.

· Conduct on-going inspection of kitchen equipment and oversee proper use of major kitchen equipment to ensure employees follow industry safety and sanitation requirements.

· Type of Meals to prepare are buffet style, grab-n-go, quickly prepare.

· Pre-season duties to include:

· Evaluation of galley equipment while making sure functionality

· Creating seasonal meal plan with ordering follow-thru

· Buying Days

· Travel Days

· Offload Days

· Cooks are responsible for kitchen galley sanitation and cleaning, with assist from deckhands.

· Ensure adequate supplies, tools, etc.

· Maintain a clean and safe environment by adhering to all federal, state, and local sanitation and safety requirements

· Required: Knowledge of commonly usedconcepts, practices, and procedures within Seafood Industry.

Qualifications

To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. The requirements listed below are representative of the knowledge, skill, and/or ability required.

· High School Diploma or GED Strongly Encouraged

· Three years related experience or training or the equivalent of

· Cooking experience with another maritime or similar at-sea industrycompany preferred

· Food Safety certificates strongly encouraged.

· Ability to plan extended menus and order appropriate supplies within budgetary requirements.

· Ability to live on a vessel for X AMOUNT OFDAYS&

· Build repour and a solid communication structure with the Captain.

· $253 Annual Alaska commercial fishing license(payroll expense)

Physical Demands:

Employee is regularly required to stand, walk, reach, bend, stoop, sit, kneel, crouch, crawl, reach(with exceptional amount of use of hands and fingers), hear and talk. The employee must regularly lift and /or move up to 10 pounds, frequently lift and/or move up to 25 pounds and occasionally lift and/or move up to 50 pounds. Specific vision abilities required by this job include distance vision, peripheral vision,and depth perception.

Mental Activities:

Exceptional ability to work as a team with good work ethics, good decision-making skills while occasionally required to use interpersonal skills, mentoring, problem analysis, training,and supervision skills. Able to multitask in a very stressful and fast-pacedwork environment. Attention to detail and have a high level of accuracy, ability to be flexible and stress resistant. The employee will occasionally be required to exercise independent judgment anduse discretion.
