Cave Aging Specialist
The Grafton Village Cheese Company produces premium, aged cheddar cheese using traditional methods and milk from local dairy farms. It is a national leader in artisanal cheese making. It is a for profit business of the nonprofit Windham Foundation, based in Grafton, Vt. The mission of the Windham Foundation is to promote the vitality of Grafton and Vermont’s rural communities through its philanthropic and educational programs and the GVC is an important contributor to these endeavors.
Position Summary:
The Cave Aging Specialist is responsible for the brushing, washing, turning and care for the Grafton Village Cave Aged Cheeses. Other responsibilities will be to work as a member of our cheese making team, managing the cheeses in the Grafton caves and working closely with the Head Cheese Maker to ensure our quality program is adhering to the highest standard.
Reports to: Head Cheese Maker
Essential Job Functions
· General cheese care - washing, brushing, turning and wrapping according to the weekly schedule
· Organize and assist with wrapping cheese for orders
- Identify product quality issues in advance of spoilage, and build strategies to manage these issues together with the Cave Manager and buying department
- Assist with quality assessment tests and tastings
- Keep the cave environment and utensils clean according to the SOPs and SQF system

Required Experience and Education
