Vacation Relief Operator

Position Title: Vacation Relief Operator

Department:Production

Reports to: Production Superintendent and Supervisor

Job Summary:

Must be able to work any shift and at all job stations in Production, including Platform.

Primary Job Duties:

Divider: Set the speed of the divider to the required standard. Ensure that the scaling is accurate and is at the set standard. Scaling check needs to be done (3) times a dough, beginning, middle and end. Keep the dry proofer free of any old dough or debris. Monitor the dusting flour to ensure even distribution. Divider quality check sheets must be filled out properly. Ensure that all divider charts are filled out properly, and at every variety change over.

Mixer: Communicate with previous mixer about doughs being mixed. Scale ingredients one dough at a time using small scoops up to 5lbs. Load 50lb bags of ingredients into the mixer. Load 60lb buckets into the mixer. With asst. from another employee, load up to 100lb buckets of reclaim dough into the mixer. Scale ingredients for the next dough according to the dough schedule. Pull the dough trough to the front of the mixer once the dough has completed its cycle. Using the mixer controls kick the dough into dough trough.

Wrapper: Complete documentation which includes weight, temps, slice counts and lot traceability. Reviews list of the current production run. Verifies the proper codes are correctly placed and legible on the bags/cases. Ensures slicers are set correctly and the proper numbers of slices are being achieved. Ensures bagger machines are set up properly and are fastened correctly. Fill orders correctly using the wrap sheet to ensure timely delivery to the customer.

Platform: Mover product from packaging lines to appropriate trailer or staging area. Load product from staging area to trailers. Remover out-of-code product from floor (requires constant checking of date and price codes). Unload in-bound (purchased) product. Complete paperwork with accuracy and neatness. Perform trailer checks (sweeping/damage) and document information. Inform supervisor in advance of floor inventory of empty trays and other equipment.

Safety: Maintain safe work environment for all. Promotes employee safety in all areas of operation.

Sanitation: Maintains cleanliness of the work area. Follows proper GMPs at all times.

Essential Job Functions/Requirements:

Experience:Prior experience working in a Bread or Bun bakery, preferably 1 year.

Education: Basic literacy skills, able to read and comprehend instructions, signage, warnings, etc.

• General knowledge of how machinery works.
• Good hand / eye coordination.
• Able to count and perform basic math.
• Able to read and write.
• Able to keep up with machine speed through repetitive motion.
• Able to perform all duties so as not to produce damage.
• Capable of lifting up to 60 pounds without assistance. Up to 100 lbs with assistance.
• Able to stand for 10-12 hours per day.
• Physically capable of moving to all areas of the plant.
• Able to view product and determine adherence to quality control standards including size, shape, color, cut, etc.
• Able to read, comprehend and practice necessary safety procedures, signs, etc.
• Able to read and comprehend production schedule.
• Performance of other duties deemed by management to be an integral part of the job.
